Black rice has more fiber, proteins, antioxidants, vitamins and minerals than white rice, and it is a way of making a different dish.

Anthocyanin is the pigment that gives it the dark color. Along with tofu which is a vegetable protein source and along with some vegetables like asparagus, this dish represents a nutritious and satiating lunch or dinner.

Use vegetable soup as appetizer and then enjoy the black but tasty and nutritious dish.
